Fresh Tomato Sauce

I have one more work week before I go on maternity leave. I gave myself a week off and totally regret not taking two weeks, especially since my nursery is not done. Nesting is a real thing and I have crawled in the back of closets to clean every inch of the house. Kind of shocked I haven’t gone into labor with the amount of cleaning and organizing I have been doing. My next journey is to find space in the kitchen to place the baby stuff in. We live in a small house and I have a lot of kitchen gadgets (b/c food blog), causing not so much open space. I don’t like things on my counter top, so the kitchen appliances go in the cabinets. Any suggestions, please send!

The nursery is still not done, which I am getting anxiety from. My Friday night consisted of cleaning and organizing the clothes. I feel a slight relief and know when the nursery is painted, we just have to move the furniture back in place. As you know, I am a type A person, so this is making me crazy. Which is why the downstairs (the nursery and unfinished bathroom are upstairs) are extremely organized and cleaned!

Our dinners lately have been quick because my husband has been working or doing his ride time for paramedic almost every night. Most days of the week we don’t see each other or it is for an hour or so. When we have a night to have dinners together, we usually have 1-2 hours so quick dinners are a must! This fresh tomato sauce is super quick, add some veggies, chick pea pasta, and later we added leftover grilled chicken…delightful! We love the chick pea pasta as it is filling and tastes just as good as regular pasta (to us).

Fresh (& Quick) Tomato Sauce

Serves: 3-4

Directions:

  1. Heat olive oil in large non-stick skillet (may need more depending on skillet)

  2. Add all ingredients, except basil leaves.

  3. Cook on medium heat for 5 minutes.

  4. Cover and simmer for 10-15 minutes (until ready to eat).

  5. Mix with chick pea pasta and veggies to bulk it up!

  6. Enjoy the taste of Jersey tomatoes (and Jersey broccoli).

Ingredients:

  • 2 tsp olive oil

  • 7 plum tomatoes, chopped

  • 3 garlic cloves, minced

  • 1/4 cup onion, chopped

  • 1 tsp Italian seasoning

  • S& P to taste

  • 5-8 Fresh basil leaves
