Guacamole Football Cups
EAGLES!! Yes, we are Eagles fans in this household, since we live a half hour from Philly. My husband is a huge sports fan, especially any Philadelphia teams. He really should have been a sports reporter or announcer. A player can come up to bat, get on the ice, get on the court, tackle someone, or whatever they do in sports and he knows them before he sees the number or name on their jersey. The details he knows about every sports player (from all sports teams and all sports- bball, baseball, football, hockey) is pretty nuts. He will even talk about their life off the court/field/ice. I am just in awe of his ability to remember these details.
Everyone in our area is pumped for the game on Sunday. Yesterday at work, everyone had their Eagles shirts on. At my family’s farm market, we have football cakes, football bowls filled with fruit and veggies. I think I am going to make something green for Sunday morning breakfast and then be serving some of these football guacamole cups for the game. We are going to our friend’s house. They have two little kids and their daughter loves me husband! Thursday night her and I went to Trader Joe’s after the kids were in bed. We got some food for the game: like their Greek Yogurt Spinach and Artichoke dip and my favorite veggie flaxseed chips. Here are some of the items I got:
I love dips like their Mediterranean hummus, Greek Yogurt Spinach and artichoke dip, my husband’s unhealthy but delicious buffalo chicken dip, and this guacamole. I do love tortilla chips, but I also use cucumbers, celery, peppers, and carrots for dipping as well. You can dip whatever you like into these football guacamole.
Football Guacamole Cups
Serves: 6 guacamole footballs
Cut avocados in half and remove avocado into medium bowl, keep skin, and discard seed.
Add remaining ingredients (Except sour cream) to a bowl. Combine together to consistency to your liking.
Spoon guac back into avocado skins.
In a sandwich bag, place sour cream in one corner. Cut a small hole in the corner and create the lines for the football.
Serve with veggies, chips, or or use for directions (JK they are too good and won’t last long as decor.

3 ripe avocados
1/2 lime, juice
1/4 red onion, chopped
1/8 red pepper, chopped
1/2 jalapeno, chopped
1/4 cup fresh cilantro, chopped
1/2 tomato, chopped
Salt to taste
1/4 cup sour cream (anything for the football lines)
